Eating in Bergamo

Bergamo is the Italian province with the most DOP cheeses, and its cooking is that of a town set high above a plain: butter, polenta, meat.

The dishes

  • Casoncelli alla bergamasca — ravioli filled with meat, amaretti and raisins, dressed with butter, pancetta and sage. Sweetness inside a savoury dish is this kitchen's signature;
  • Polenta taragna — buckwheat polenta beaten with valley cheese;
  • Rabbit and uccelli scappati with polenta;
  • Stracciatella, which as an ice cream was invented here.
