Eating in Brescia

Brescia has the lake on one side and the mountains on the other, and a kitchen of slowly cooked meat in between.

The spiedo

Spiedo bresciano is the Sunday dish: mixed meats threaded with sage, turned for three or four hours and basted with butter. It is eaten with polenta, and in the province's trattorias you book it ahead.

The other dishes

  • Casoncelli alla bresciana, with a different filling from Bergamo's;
  • Manzo all'olio di Rovato — beef braised in Sebino oil, with anchovies;
  • Malfatti, dumplings of chard and ricotta;
  • Bagòss hard cheese with saffron, and Silter DOP from the Valcamonica.

In the glass

Franciacorta DOCG is half an hour away: bottle-fermented, and the wine that opens the table here. On Lake Garda there are Lugana and the reds of the Valtènesi.
