Eating in Isernia

Isernia is mountains and drove roads: transhumance passed through here for centuries, and the cooking is that of shepherds.

The dishes

  • Pezzata from Capracotta — mutton boiled with few aromatics in a cauldron in the open. It has its summer festival and it is the dish of the transhumance;
  • Cavatelli and crioli (the Molise guitar-string spaghetti) with sauce or truffle;
  • Polenta with greens and cicerchia soup;
  • Grilled lamb, in the villages of the Alto Molise.

Cured meats and cheeses

The Signora di Conca Casale is a very rare cured meat, a Slow Food presidium made by a handful of families; the caciocavallo of Agnone belongs to this province, and pecorino di Capracotta comes from the highest pastures.

The truffle

The white truffle of San Pietro Avellana has its fair in August: one of the most prized whites in central Italy.
