Eating in L'Aquila
L'Aquila stands at 700 metres below the Gran Sasso, and its cooking is mountain food: mutton, pulses, saffron.
The saffron
Zafferano dell'Aquila DOP is grown on the Navelli plateau and picked by hand at dawn over a few autumn days. It goes into risotto, soups and roasts, and here it is not an exotic luxury: it is a local crop.
The dishes
- Arrosticini — mutton cut into cubes on skewers, grilled on a fornacella and eaten with the hands, pulled off with the teeth;
- Pasta alla chitarra with tiny meatballs, lamb ragù or mutton sauce;
- Pecora alla callara, cooked for hours in a copper cauldron;
- Lentils of Santo Stefano di Sessanio and mountain chickpeas.
The cheese and cured meats
Pecorino di Farindola, made with pig rennet — a unique case — and dried scamorze.
The sweets
The confetti of Sulmona, in this province, made since the fifteenth century; torrone, and ferratelle baked in irons.
