Latina is a young province — the land reclamations of the 1930s — with an ancient coast: Gaeta, Sperlonga, the Circeo.

From the plain

Buffalo mozzarella is made here too: the Agro Pontino is one of the areas of Mozzarella di Bufala Campana DOP, and the dairies sell early in the morning.

From the coast

  • Tiella di Gaeta — a closed savoury pie filled with octopus, escarole, anchovies or onion. Bought by the wedge and eaten in the hand;
  • Gaeta olives, purple and fleshy, in brine;
  • Fish soup from Terracina and San Felice Circeo, with the Tyrrhenian catch.
