Eating in Massa
Massa lies between the Apuan Alps and the sea, in a piece of Tuscany that borders both Liguria and Emilia — and you can taste it.
What you only eat here
- Lardo di Colonnata IGP — cured in marble basins in the village above Carrara with salt, pepper, rosemary and garlic. Sliced thin over warm bread;
- Testaroli from the Lunigiana, cooked on a hot slab and dressed with pesto or cheese;
- Torta d'erbi — the savoury pie of wild greens, baked between two slabs;
- Panigacci, small unleavened flatbreads.
From the coast
Marina di Massa and Marina di Carrara bring in the Tyrrhenian catch; the fish soup here follows the coastal recipes, not the inland ones.
In the glass
Colli di Luni DOC straddles the Ligurian border: its vermentino is what people drink with the lard and with the fish.
