Eating in Matera

Matera is a city of stone and wheat: bread is the product almost all of its cooking turns around.

The bread

Pane di Matera IGP is made with durum semolina and sourdough, weighs up to two kilos and keeps a week. Its shape is a horn, and on this bread rest the "recovery" dishes:

  • Cialledda — soaked stale bread with tomato, onion, olives and oil, cold in summer and hot in winter;
  • Pancotto with wild greens.

The crusco peppers

The peppers of Senise IGP are sun-dried in strings and fried for an instant in oil: they turn crisp — *cruschi* — and are crumbled over pasta, salt cod and potatoes. They are the signature of Lucanian cooking.

The dishes

  • Orecchiette and strascinati with ragù or turnip tops;
  • Crapiata — the pulse and grain soup of 1 August, made from what is left;
  • Roast lamb with potatoes, and aged caciocavallo podolico.
