Modena has two products that carry its name around the world, and a home kitchen best eaten in company.

The vinegar, which is two different things

Aceto Balsamico Tradizionale di Modena DOP ages twelve or twenty-five years in batteries of casks in attic rooms, and is served in drops. Aceto Balsamico di Modena IGP is something else: younger and cheaper. The names look alike, the products do not.

The table

  • Tortellini and tortelloni, in broth or meatless;
  • Gnocco fritto and tigelle (crescentine) with cured meats and pesto modenese of lard, garlic and rosemary;
  • Zampone and cotechino di Modena IGP, the New Year's Eve dish;
  • Parmigiano Reggiano DOP, because this is production country too.

Lambrusco — di Sorbara, Grasparossa di Castelvetro, Salamino di Santa Croce — is drunk cold and sparkling, and it is the wine the cured meats are eaten with here.
