Eating in Napoli
Naples has a kitchen eaten at three heights: in the street, in the pizzeria, and at the Sunday table.
The pizza
Pizza Napoletana STG has a written standard: a dough of flour, water, salt and yeast only, stretched by hand, baked in a wood oven at 485 degrees for under 90 seconds. The two classics are marinara (tomato, garlic, oregano, oil — no cheese) and margherita. The fried one is the other half of the tradition, and it costs less.
The Sunday dishes
- Ragù napoletano — whole cuts of meat cooked in tomato for hours, barely bubbling. The sauce dresses the pasta, the meat is the second course;
- Genovese — onions and beef cooked until they collapse, and nothing to do with Genoa;
- Pasta e patate with provola, pasta e fagioli, and sartù di riso on special days.
The friggitoria
Frittatina di pasta, crocchè, scagliozzi, seaweed zeppoline, montanara: eaten standing, out of a paper cone, for a few euros.
The morning
Sfogliatella, riccia or frolla, babà, and coffee — drunk short and sweet here, and sometimes left "sospeso" for whoever comes next, which is a real custom of the city.

Lacryma Christi del Vesuvio, Falanghina, Piedirosso: the wines of the volcano and the Campi Flegrei.
