Su filindeu

Su filindeu — "the thread of God" — is a pasta only a handful of people in the world can make, all of them in Nuoro: semolina drawn into the finest threads, layered three deep, dried in the sun and cooked in mutton broth with fresh pecorino. It is made for the feast of Saint Francis at Lula.
