Eating in Oristano

Oristano lives around the Cabras lagoon, one of the richest fishing grounds in the Mediterranean: the cooking here is brackish-water fish.

The bottarga

Cabras is the capital of mullet bottarga: the roe is salted, pressed and sun-dried. It is eaten in slices with oil or grated over pasta.

The merca

Merca is mullet boiled in sea water and wrapped in zibba, a marsh herb that preserves and scents it. It is eaten cold, and it is found only here.

The other dishes

  • Eel, roasted or stewed, from the lagoon;
  • Fregola with clams, and malloreddus;
  • Pane carasau and coccoi bread, hand-carved for feast days;
