Eating in Pavia
The province of Pavia is one of the largest rice-growing areas in Europe, and across the Po the Apennines begin: two kitchens in one.
The rice
Risotto with mushrooms, with frogs, alla certosina (freshwater fish, crayfish and frogs): the Lomellina is flat and flooded, and rice is its crop.
The other dishes
- Zuppa alla pavese — boiling broth poured over bread, a raw egg and cheese. It takes two minutes, and the city tells a story about where it came from;
- Goose from the Lomellina in every form, including Mortara goose salami IGP;
- Salame di Varzi DOP, from the hill country of the Oltrepò.
