Perugia sits at the centre of a region with no coast, and eats accordingly: pork, pulses, bread and truffle.

The bread you fill

Torta al testo — unleavened bread baked on a hot slab — is split and filled with sausage and greens, ham, or cooked chard. It has been Umbria's street food since before the phrase existed.

The dishes

  • Strangozzi (or strozzapreti) — pasta of flour and water, with truffle sauce or Umbrian "arrabbiata";
  • Porchetta, which here is a trade and has its own market stalls;
  • Palombacce alla ghiotta and grilled lamb;
  • Lenticchie di Castelluccio di Norcia IGP, so small they need no soaking.

Cured meats and truffle

Norcia is in this province, and gave its name to the trade: IGP ham, capocollo, lonza. The prized black truffle of Norcia is gathered from December to March.

Sagrantino di Montefalco DOCG, a tannic red from a native grape, and Torgiano Rosso Riserva DOCG. Baci Perugina were created in the city in 1922.
