Ragusa is the Hyblean plateau: dry-stone walls, pasture, and a kitchen with more dairy than fish, even though the sea is there.

The chocolate

Cioccolato di Modica IGP is worked cold, under 50 degrees: the sugar never melts and stays grainy. The technique came from the Spanish, and the classic versions are cinnamon and chilli.

The cheeses

  • Ragusano DOP, the great oblong form — the "scalune" — aged hanging;
  • Hyblean provola and ricotta, from the province's pastures.
