Eating in Rieti

Rieti sits in a basin ringed by mountains, and its province contains Amatrice: the best-known dish of Roman cooking was born up there, among shepherds.

Amatriciana, and gricia

The recipe is guanciale, pecorino, tomato — and before tomato there was gricia, the same thing without it. In Amatrice it is made with spaghetti; in Rome also with bucatini.

The other dishes

  • Fregnacce — squares of egg pasta with sauce, or the rolled and filled version;
  • Stracciatella in broth, egg and cheese;
  • Trout from the Velino and river crayfish;
  • Coratella with artichokes, in spring.

The products

Sabina DOP olive oil — one of the oldest denominations in Italy — pecorino from the Monti della Laga, Rascino lentils and the pea bean of Accumoli.

The sweets

Sweet fregnacce and the cannoli di Rieti filled with sheep's ricotta.
