Sassari has a city kitchen with two things found nowhere else in Sardinia: a Genoese chickpea cake and a soup that is not a soup at all.

The fainé

Fainé sassarese is chickpea farinata, brought by the Genoese: baked in a pan in a wood oven and eaten by the slice, with sausage, onions or mushrooms. Sassari has its historic fainé houses.

The Gallura soup

Suppa cuatta is layered stale bread with fresh cheese and mutton broth, baked until it gratinates: you do not spoon it, you cut it. It comes from the Gallura, in this province.
