Eating in Teramo
Teramo has the most codified cooking in Abruzzo, with dishes tied to precise dates.
The dishes
- Scrippelle 'mbusse — thin crêpes rolled with pecorino and served in hen broth. The city's first course;
- Timballo teramano — the same crêpes instead of pasta sheets, layered with ragù, tiny meatballs and cheese;
- Mazzarelle — lamb offal rolls wrapped in chard leaves;
- Virtù — the May Day soup: seven pulses, seven vegetables, seven pastas, the last of winter and the first of spring. It takes whole days to prepare, and is eaten on that day.
