Eating in Trento

Trento is an Alpine city that speaks Italian and cooks the way the Alps cook: bread, cheese, butter and very little sea.

The dishes

  • Canederli — stale-bread dumplings with speck or cheese, in broth or with melted butter. The first thing to order;
  • Strangolapreti — bread and spinach dumplings with butter and sage;
  • Carne salada — beef cured in salt and spices, served raw and thin or seared with beans. It comes from the lower Sarca valley and is the most recognisable Trentino dish;
  • Storo polenta, deep yellow and full-flavoured, with luganega sausage or venison.

The cheeses

Puzzone di Moena DOP, Trentingrana, Casolét and the alpine-hut cheeses: ordered on a board with honey and mostarda.

In the glass

Trentodoc is mountain bottle-fermented sparkling wine; among the still wines are Teroldego Rotaliano, Marzemino and the Vino Santo of the Valle dei Laghi.
