Eating in Varese
Varese has seven lakes around it and Switzerland above: freshwater fish, polenta, and low-mountain dishes.
The dishes
- Perch risotto — the fillets breaded in butter, laid over the rice: the dish of Lake Varese and Lake Maggiore;
- Polenta e bruscitt, the finely chopped beef stew of the Busto area;
- Cassoeula in winter, as across western Lombardy;
- Formaggella del Luinese DOP, from goat's milk — the only Lombard goat DOP.
The sweets
The brutti e buoni of Gavirate are hazelnut and egg white, and have gone by that name since 1878. Local pastry shops sell them loose.
Around it
Lake Maggiore and Lake Lugano are half an hour away, bringing shad, whitefish and bleak to the table.
