Eating in Venezia

In Venice you eat standing before you eat sitting: the bacaro is the bar where you order an ombra of wine and a couple of cicheti, then walk on to the next one.

The cicheti

Crostini, half eggs, meatballs, baby octopus, baccalà mantecato on white bread, and sarde in saor — onion, vinegar, raisins and pine nuts, the sailors' preserve that became the city's dish.

The sit-down dishes

  • Bigoli in salsa — dark pasta with onion and anchovy, traditionally a meatless dish;
  • Risi e bisi, made in spring, loose rather than a proper risotto;
  • Calf's liver alla veneziana, with slowly cooked onions;
  • Moeche — soft-shell crabs, fried whole. Two seasons a year, and then they are gone.

The market

The Rialto market — the fish hall especially — works early and closes mid-morning: which is why in many osterias the menu changes daily.
