Eating in Vercelli
Vercelli is the capital of Italian rice: around the city lie the paddies that in April are sheets of water.
The rice
Riso di Baraggia Biellese e Vercellese DOP was the first Italian rice to be granted the denomination. Arborio, Carnaroli, Baldo: here they are chosen dish by dish.
The dishes
- Panissa — rice with Saluggia beans, pork rind, lard and salam d'la duja, loosened with red wine. It is the city's dish;
- Frogs, stewed or fried, straight from the paddies;
- Bollito with its sauces, and Piedmontese fritto misto.
The sweets
Bicciolani, spiced biscuits with cinnamon, cloves and nutmeg, made in Vercelli since the mid-nineteenth century.
In the glass
Gattinara DOCG is this province's Nebbiolo, alongside Bramaterra and Lessona.
