Eating in the province of Agrigento
Agrigento is the Valley of the Temples and a very long coast, with Lampedusa and Linosa closer to Africa than to Europe. The cooking mixes Greek, Arab and Spanish without hiding it.
What you eat here
- Cùscusu — the fish couscous of North African descent, made at Sciacca (the best-known tradition is Trapani's, but it is eaten on this coast too).
- Agrigento almonds and torrone (the pistachio belongs to Bronte, in Catania).
- Sarde a beccafico and pasta con le sarde, with wild fennel, raisins and pine nuts.
- Sciacca prawns and the oily fish of the local fleet.
- Cassata and cannoli, and the *taralluccio* of Favara.
The wine
This is Menfi, one of the island's most dynamic zones: Nero d'Avola, Grillo, Inzolia and Chardonnay. Nearer the sea the whites turn saline.
