Arezzo is eastern Tuscany: the Casentino, the Valdichiana, the Tiber valley. The cattle breed that made the steak famous comes from here, and the cooking is still that of people who waste nothing.

What you eat here

• Chianina — the Valdichiana breed, from which the two-finger-thick bistecca alla fiorentina is cut and cooked rare.
• Acquacotta — bread, onion, vegetables and egg; the vegetables change between the Casentino and the Maremma.
• Grifi e polenta — stewed veal muzzle, an Arezzo dish.
• Casentino prosciutto and the Tiber valley's tortello alla lastra.
• Zolfini beans, and scottiglia, a stew of several meats.

The wine

Chianti Colli Aretini, Valdichiana Toscana DOC, and towards the border Sangiovese and Merlot reds; Vin Santo is taken seriously here.
