Asti is the Monferrato: hills and underground cellars. Its cooking turns around truffle, raw meat, and a range of wines drunk all year.

What you eat here

• Carne cruda all'albese — Fassona beef chopped by knife, with oil, lemon and salt; sometimes truffle over the top.
• White truffle — the same zone as Alba, in autumn.
• Agnolotti del plin and tajarin made with thirty yolks, with roasting juices or butter.
• Bagna càuda — garlic, anchovy and oil kept hot in the middle of the table, with raw vegetables.
• Robiola di Roccaverano DOP, from goats, and bunet, a cocoa and amaretti pudding.

The wine

Barbera d'Asti DOCG and Nizza DOCG for the reds; Moscato d'Asti and Asti for the sweet ones, and Ruchè di Castagnole Monferrato, a perfumed red found almost only here.
