Restaurants in the province of Bolzano

South Tyrol eats in German and drinks in Italian, or the other way round depending on the valley. It has more farm restaurants than any other Italian province, and the meal has its own order.

What you eat here

• Speck Alto Adige IGP — boned leg, salted, cold-smoked with juniper and aged. Cut by hand, thick.
• Canederli (Knödel) — stale-bread dumplings with speck or cheese, in broth or dry with butter.
• Schlutzkrapfen — half-moons filled with spinach and ricotta, melted butter and chives.
• Goulash with polenta, and *carne salada* towards the Trentino border.
• Apple strudel, Kaiserschmarrn and Christmas Zelten; and Mela Alto Adige IGP, which is part of the landscape in its own right.

The wine

Gewürztraminer, Lagrein, Schiava (Vernatsch) and Pinot Bianco: taut mountain whites and reds that do not weigh. One of the highest average standards in Italy.
