Catania sits at the foot of Etna, and that explains nearly everything: volcanic soil, vegetables, a fish market that is a spectacle, and the island's most famous pastry.

What you eat here

  • Pasta alla Norma — fried aubergine, tomato, basil and salted ricotta. Catanese, and named after Bellini's opera.
  • Arancino — in Catania it is pointed and masculine; elsewhere on the island round and feminine.
  • Pistacchio verde di Bronte DOP — grown on lava, harvested in alternate years.
  • Fish from the Pescheria market: sardines, anchovies, tuna.

The wine

Etna DOC changed how Sicilian wine is seen: Nerello Mascalese for red and Carricante for white, on lava terraces up to a thousand metres. It drinks like Burgundy, not like a southern wine.
