Restaurants in the province of Chieti

Chieti is the largest province in Abruzzo and runs from the sea to the Maiella massif. The "trabocchi coast" brings the fish, the inland the cured meats and the oil, and in between lies the region's widest stretch of vineyard.

What you eat here

• Ventricina del Vastese — a large salame of knife-cut meat seasoned with sweet pepper and wild fennel. Cut it thick.
• Brodetto alla vastese — rockfish layered in an earthenware pot with fresh tomato and chilli. You don't stir it: you shake the pot.
• Extra virgin olive oil, a serious crop here: the local *gentile di Chieti* variety gives sweet, light oils.
• Scrippelle and pallotte cacio e ova, meatless bread-and-cheese dumplings in sauce.
• The trabocchi, the wooden fishing machines along the coast, are now also places to have dinner over the water.

The wine

Montepulciano d'Abruzzo in quantity and, increasingly, in quality; the white is Trebbiano d'Abruzzo, which in the right hands ages far longer than you would expect.
