What you eat here

• Liquirizia di Calabria DOP — the root that gives the finest liquorice there is, pure, with no sugar. It turns up in sweets and in savoury cooking too.
• Fichi di Cosenza DOP, sun-dried figs, often baked with almond and chocolate.
• Patata della Sila IGP, floury and full-flavoured at that altitude, and porcini.
• Caciocavallo silano DOP and butirro, caciocavallo with butter sealed inside.
• Anchovies, sardella (poor man's caviar: whitebait and chilli) and pasta with fried breadcrumbs.

The wine

Savuto, Donnici and Terre di Cosenza DOC: Magliocco and Gaglioppo reds, coming back after decades when nobody looked for them.
