Restaurants in the province of Cuneo

Cuneo is the largest province in Piedmont and contains the Langhe, the Roero and the Occitan valleys. It is probably the part of Italy where food and wine are most tightly bound.

What you eat here

• White truffle of Alba — October to December, raw, shaved over tajarin or a fried egg.
• Raw Fassona beef, vitello tonnato and bollito misto with its seven cuts.
• Tajarin and agnolotti del plin, which were born here.
• Nocciola Piemonte IGP — the *tonda gentile* hazelnut, and a flourless hazelnut cake.
• Castelmagno DOP, Bra DOP, Raschera DOP: three very different valley cheeses.

The wine

Barolo and Barbaresco DOCG, from Nebbiolo, and around them Barbera d'Alba, Dolcetto, white Roero Arneis and the Moscato of the southern hills. Italy's best-known denomination abroad.
