What you eat here

• Rosa di Gorizia — a radicchio grown under earth in winter and eaten raw, priced like a rare flower.
• Jota — a soup of sauerkraut, beans and potato with smoked pork.
• Frico — cheese melted in the pan, with or without potato, crisp at the edges.
• Brovada DOP — turnips fermented in grape marc, served with cotechino.

The wine

The Collio is one of Europe's great white-wine areas: Friulano, Ribolla Gialla, Malvasia istriana, Sauvignon and a Pinot Grigio in another league. It is also where modern skin-macerated "orange" wines were born.
