Restaurants in the province of Livorno

Livorno is a port, and its cooking is that of a sea city: humble fish, spices that arrived by ship, and a soup with a name of its own. The island of Elba is here too.

What you eat here

• Cacciucco — at least five kinds of fish, as many as the Cs in the name, with garlic-rubbed bread. Hot, thick, made from rockfish.
• Torta di ceci — chickpea flatbread with pepper, eaten in a roll as *cinque e cinque*.
• Salt cod alla livornese and red mullet alla livornese, stewed with tomato.
• Ponce livornese, rum, coffee and lemon peel, served hot.
• On Elba: stoccafisso alla riese, gurguglione, and schiaccia briaca.

The wine

Bolgheri DOC is here, and it changed the history of Italian wine with Bordeaux blends; Bolgheri Sassicaia has a DOC of its own. Elba makes Aleatico Passito DOCG.
