What you eat here

• Pumpkin tortelli — pumpkin, amaretti, apple mostarda and parmesan. They are sweet, and are meant to be.
• Risotto alla pilota — rice cooked by absorption with pistùm, crumbled sausage meat.
• Pike in salsa, with capers and anchovy, served with polenta.
• Salamella mantovana, cotechino and the grana of the lower plain.
• Sbrisolona — an almond cake you break with your hands — and *torta delle rose*.

The wine

Lambrusco Mantovano DOC on the right bank of the Po, dry and sparkling; the morainic hills near Garda make whites and *chiaretto*.
