Restaurants in the province of Messina

Messina faces the Strait, and its cooking is fish from fast water: swordfish above all. Behind it the Nebrodi and Peloritani mountains bring mushrooms, black pig and cheese.

What you eat here

• Swordfish — *a ghiotta*, in rolls, or *alla stemperata*; and Messina-style stockfish, with potato, olives and capers.
• Braciole messinesi and the local focaccia with escarole, tuma and anchovy.
• Nebrodi black pig and mountain provola.
• Granita and pignolata, glazed in white and dark.
• Salina capers and Aeolian malvasia — those islands are in this province.

The wine

Malvasia delle Lipari DOC, sweet and saline, and Faro DOC — a Nerello red that nearly disappeared and was rescued by a few growers. The Nebrodi make high-altitude whites.
