What you eat here

• Risotto alla milanese — rice, marrow, butter, saffron. Eaten alone or under the ossobuco, in which case it is *risotto con l'ossobuco*.
• Cotoletta alla milanese — bone-in veal chop, breaded and fried in butter. Thick, not "elephant's ear": that is a different dish.
• Cassoeula, mondeghili (leftover meatballs) and busecca, tripe.
• Panettone, which serious bakeries here make year-round.
• And everything else: Milan is the Italian city where you eat foreign food best.
