Potenza is mountain country: the Lucanian Apennines, the extinct volcano of the Vulture, and villages where pork and peppers hold up the entire larder. The food is substantial, and the wine is one of the great reds of southern Italy.

• Peperone di Senise IGP — the pepper that becomes *crusco*: threaded into strings, sun-dried and then fried.
• Lucanica, the sausage that gave its name to a whole family of cured meats, and pezzente, made from what is left over.

• Pecorino di Filiano DOP and Canestrato di Moliterno IGP, aged in traditional cellars.

The wine

Aglianico del Vulture DOC grows on volcanic soil at altitude — the Superiore is DOCG: firm tannin, long acidity, and it improves with keeping. It is the reason this province appears on wine lists around the world.
