Restaurants in the province of Rovigo

Rovigo is the Polesine, the land between the Adige and the Po: reclaimed fields, rice, and the Delta with its lagoons. The least touristic Veneto province and one of the best to eat in.

• Cozza di Scardovari DOP and Delta clams, farmed in the lagoon.
• Riso del Delta del Po IGP — Carnaroli and Arborio on brackish land, with a grain that holds its cooking.
• Eel and sea bass from the lagoons.
• Aglio bianco polesano DOP, a sweet garlic, and Polesine pumpkin.
• Risotto alla polesana, with lagoon fish, and rice *tiella*.

The wine

The Polesine makes little wine; lists look to the Colli Euganei and eastern Veneto Merlot. With Delta mussels, a dry saline white.
