Restaurants in the province of Salerno

Salerno is a long province: the Amalfi coast, the Sele plain, the Cilento. Three different cuisines — and one of them is where the Mediterranean diet was first described.

What you eat here

• Colatura di alici di Cetara DOP — the amber liquid drawn from salted anchovies. A few drops on spaghetti with garlic and parsley, and nothing else is needed.
• Limone Costa d'Amalfi IGP — the *sfusato*, thick-skinned and fragrant: in salads, in the *delizia al limone*, in limoncello.
• Buffalo mozzarella from the Sele plain, and buffalo meat.
• Fichi bianchi del Cilento DOP, dried and stuffed with almond.
• Nocciola di Giffoni IGP, Cilento goat's cacioricotta, and rod-rolled fusilli.

The wine

The Cilento gives Fiano and Aglianico on hills near the sea; the Amalfi coast makes little wine but with character, on terraces you can only reach on foot.
