South Sardinia holds the Sulcis, the Iglesiente, the Marmilla and the Sarrabus: mines, sand and hills. It has ungrafted vines of a kind that barely exist in Europe any more.

What you eat here

• Carloforte tuna — the trap fishery still works, and every part of the fish is eaten, including tuna bottarga and musciame.
• Cascà from Carloforte — a vegetables-only couscous, a Tabarkan legacy.
• Malloreddus and fregula, and inland porceddu.
• Pecorino and ricotta mustia, smoked.
• Muravera oranges and the citrus of the Sarrabus.

The wine

Carignano del Sulcis DOC grows on sands phylloxera never reached: ungrafted vines, often very old, giving soft, deep reds. One of Italy's most interesting and least known areas.
