Terni is southern Umbria, warmer and closer to Rome: oil, black truffle, lake fish, and an old tradition of hand-pulled pasta.

What you eat here

• Ciriole ternane — thick flour-and-water spaghetti with garlic and tomato, or with truffle.
• Black truffle from the Valnerina and around Orvieto, and mushrooms from the Martani hills.
• Lake fish from Piediluco and the Alviano reservoir: perch, tench, eel; a fish *porchetta* really exists.
• Palombo alla ternana, dogfish with olives and anchovy, and lamb coratella with artichokes.
• Pampepato di Terni IGP — a dark Christmas cake of chocolate, nuts, honey and spice.

The wine

Orvieto DOC is a historic white of Grechetto and Trebbiano, already drunk in the Renaissance; the Amerino area makes Sangiovese and Ciliegiolo reds.
