Udine is the largest province in Friuli, running from lagoon to the Julian Alps. It holds the region's best-known ham and a mountain cooking that resembles nothing else in Italy.

• Prosciutto di San Daniele DOP — sweet, with the trotter still attached, aged where Carnia air meets sea air.
• Frico — crisp or soft, of Montasio and potato; the Friulian dish above all others.
• Cjarsons from Carnia, ravioli whose fillings mix herbs, raisins, cocoa and cinnamon.
• Brovada e muset, goulash, and dark buckwheat polenta.
• Montasio DOP and wild herbs, which in Carnia are a serious subject.

The wine

The Colli Orientali del Friuli make great whites (Friulano, Ribolla, sweet Picolit) and native reds such as Schioppettino and Pignolo, rescued when they had nearly vanished.
