Vibo Valentia is small and has two products that travelled the world: an onion and a spreadable salame. Both come from villages of a few thousand people.

What you eat here

• 'Nduja di Spilinga — a soft, spreadable pork salame with an amount of chilli that looks like a mistake and is not. On warm bread, in pasta, on pizza.
• Cipolla rossa di Tropea Calabria IGP — sweet enough to eat raw. In salads, as jam, even in ice cream.
• Fileja — pasta hand-rolled around a rod, the shape that stands up to 'nduja.
• Oily fish and cured tuna along the coast between Pizzo and Tropea.
• Tartufo di Pizzo IGP — the ball of ice cream with a molten chocolate heart, born in the main square of Pizzo.

The wine

The coast makes light Greco and Malvasia whites; the reference red is Magliocco, and with 'nduja it is the pairing that works.
