Eating in Bolzano

In Bolzano you eat South Tyrolean: the menus are in two languages and the dishes come from the other side of the Alps, even when the wine is Italian.

The dishes

  • Speck Alto Adige IGP — cold-smoked and matured, cut thick with rye bread (Schüttelbrot);
  • Canederli (*Knödel*) in broth, with speck, spinach or grey cheese;
  • Schlutzkrapfen — rye half-moons filled with spinach and ricotta, with melted butter;
  • Goulash with polenta, and roast pork shank.

The cheese

Graukäse (grey cheese) from the Valle Aurina is lean and pungent, eaten with onion and vinegar: the opposite of a board cheese, and entirely at home here.

The sweets

Apple strudel, Kaiserschmarrn, Buchteln and Christmas Zelten.

In the glass, and in autumn

Lagrein, Santa Maddalena, Gewürztraminer and Schiava. In autumn comes Törggelen: you climb up to the farmsteads for chestnuts, speck and new wine — a season, not a venue.
