Eating in Cosenza

Cosenza lies between the Sila plateau and the Tyrrhenian, and its province has more denominations than any other in Calabria.

The products

  • Fichi di Cosenza DOP — sun-dried, opened flat or threaded into "crocette";
  • Liquirizia di Calabria DOP — the root is harvested, the juice extracted and reduced into pastilles. It has been worked here since the sixteenth century, in the *conci* along the Ionian coast;
  • Patata della Sila IGP, grown above a thousand metres;
  • Caciocavallo Silano DOP and the mountain pecorini.

The dishes

  • Lagane e ceci, wide pasta with chickpeas;
  • Rosamarina (or sardella) — tiny fish with chilli, spread on bread. It is made with other fish today, since whitebait is banned;
  • Pipi e patate, peppers and potatoes in the pan;
  • Cuzzupa at Easter and fried crispelle.
