Enna is Italy's highest provincial capital and the only Sicilian one without a coast: its cooking is all mountain and wheat.

The cheese

Piacentinu Ennese DOP is a pecorino made with saffron and whole black peppercorns: the yellow comes from the spice, not the milk, and it is made only in this province.
