Eating in Mantova
Mantua has a court kitchen that kept sweetness inside savoury dishes more than any other Lombard city.
The dishes
- Pumpkin tortelli — squash, amaretti, Mantuan mostarda and grana, with melted butter and sage. The amaretti are not a flourish: they are the recipe;
- Risotto alla pilota — rice cooked by absorption with pistùm, crumbled fresh sausage. It is named after the workers of the rice mills;
- Pike in salsa, with capers and anchovies, from the river Mincio;
- Donkey stracotto with polenta, which here is not a rarity.
The sweets
Sbrisolona — almonds, butter, maize flour — is broken by hand, never cut. And anello di Monaco, the leavened cake of the holidays.

Lambrusco Mantovano DOC on the plain, and the wines of the Colli Mantovani on the moraine hills.
