Eating in Palermo

Palermo is eaten in the street, and its historic markets — Ballarò, the Capo, the Vucciria — are open-air kitchens before they are fruit stalls.

The street food

  • Pane ca' meusa — veal spleen and lung boiled and dipped in lard, in bread. Ordered *schietto* (plain) or *maritato* (with ricotta and caciocavallo);
  • Panelle and crocchè, chickpea and potato fritters in bread;
  • Sfincione — the thick focaccia with onion, anchovy, tomato and caciocavallo;
  • Stigghiola — lamb intestines rolled and grilled in the street;
  • Arancine — in Palermo they are feminine and round, with ragù or butter.

At the table

  • Pasta con le sarde — wild fennel, sardines, raisins, pine nuts and saffron: the dish that tells the island's history;
  • Aubergine caponata, sweet and sour;
  • Involtini alla palermitana and pasta ch'i broccoli arriminati.
