Eating in Pisa

Pisa is a river city with the sea close by, and its food sits between the two.

Eaten in the hand

Cecina — chickpea flour, water and oil, baked in a copper pan — is sold by the slice and tucked into a roll. It is the city's snack, and in Pisa it goes by that name, not "farinata".

The dishes

  • Bordatino alla pisana — a soup of maize flour, black cabbage and beans, of seafaring origin;
  • Salt cod with leeks, the Friday dish;
  • Mucco pisano, the recovered local cattle breed, and Certaldo onions in the markets.

At San Miniato, half an hour away, they gather white truffle, which has its fair in November. The Monti Pisani make oil and wine, and the coast is twenty minutes off: the fish on Pisan tables comes from there.
