Rovigo is the Polesine, the land between the Adige and the Po: water, rice fields and vegetable gardens, out to the Delta.
From the water
- Eel from the Delta, grilled or stewed, the historic product of Porto Tolle and Comacchio;
- Risotto with lagoon fish, and Riso del Delta del Po IGP, grown in brackish ground;
- Mussels and clams from Scardovari, the mussel with its own DOP.
From the land
- Aglio Bianco Polesano DOP, the base of almost every local soffritto;
- Insalata di Lusia IGP, crisp and light;
- Squash and melon from the Polesine's sandy plots.
At the table
