The province of Salerno holds the Amalfi Coast and the Cilento together: two different sea kitchens, and a plain that makes mozzarella.

The anchovies

  • Colatura di alici di Cetara DOP — the liquid that drips from salted anchovies, heir to Roman *garum*. A few drops dress spaghetti with garlic, parsley and oil, and no salt is added;
  • Menaica anchovies, caught with an ancient net in the Cilento, a Slow Food presidium.

From the land

  • Mozzarella di Bufala Campana DOP, made here on the Sele plain;
  • Mozzarella nella mortella, from the Cilento, wrapped in myrtle branches that scent it;
  • Cilento cacioricotta grated over pasta, and fusilli rolled on a rod;
