Eating in Trieste
Trieste was the port of the Austro-Hungarian empire and has not forgotten it at the table: here you eat Central European food with the sea in front of you.
The buffets
The Trieste buffet is an institution: you go in, order porcina — boiled pork, rind, Vienna sausage — with kren (horseradish) and mustard, and drink a glass standing up. It is the city's lunch, not a curiosity for visitors.
The dishes
- Jota — a soup of sauerkraut, beans, potatoes and pork ribs: the winter dish, shared with Carinthia and Slovenia;
- Sardoni in savor, anchovies marinated with onion and vinegar;
- Goulash and ćevapčići, entirely at home here;
- Spider crab and Adriatic fish in the osterias along the waterfront.
The sweets
Putizza, presnitz and strucolo: rolled pastry with walnuts, raisins and spices. They are Austrian and Slovenian at once, and the historic pastry shops sell them.
In the glass
Carso DOC gives Vitovska and Terrano, wines grown on rock; just beyond lies the Collio.
